Nat’s Energy Cookies
Ingredients
- 3/4 cup oil (olive, soya, sunflower, grapeseed, sesame)
- 3/4 cup honey or maple syrup (I do half and half)
- 5 large eggs
- 3 tablespoons of vanilla
- 2 tablespoons of water
- 3 cups of oat flakes/quick cooking oats
- 1 cup of flour (kamut, whole wheat, multi-grain…your choice)
- 1/2 cup of ground flax seed
- 1/2 cup of ground All-Bran
- 1.5 teaspoons of baking powder
- 1 teaspoon of salt
- 1 teaspoon of cinnamon
- 1 teaspoon of Jamaican spice
- 3+ cups of personal mix: pumpkin seeds, sesame, poppy, sunflower, slivered almonds, cranberries, raisins, chocolate chips or caroub, pine nuts, other dried fruits etc. You can be creative with this! I tend to go nut free in the school year to make it school safe and since I’m not much into dried fruits, I usually go for the seeds and chocolate chips.
Preparation
- Preheat oven to 350F
- Mix oil and honey/maple syrup
- Add the lightly beaten eggs, vanilla and water
- Mix all the dry ingredients in a separate bowl
- Add the first mix to the dry ingredients. Moisten
- Press the cookie mix into a tablespoon and dispose on the cookie sheet
- Put cookies in the oven, on top grill
- Cook about 15-20 minutes depending on your cookie size and oven

Extra tips from Natalie
- Grease your sheet for best results (I’ve never done this and they’ve never stuck to my sheet
- Use a bowl with warm water to dip and clean fingers when the dough becomes too sticky
- Add one or two ripe bananas, mashed well (I did this once, it was good but I prefer the original recipe)
- If you add fruit, add a bit more oat flakes/quick cooking oats

A cup of coffee and a cookie and you’re good for a few hours!Little advice: Not the greatest snack to give before going to sleep as it has so much protein that it really should be used as an energy booster mid-morning or mid-afternoon!
